For symbols I think you can use the unicode key-in such as ALT+0176 (keep ALT key down and key in 0176)
I don't think there is any control over individual cells as the text is governed by whatever style is set. You can however change the style for all cells and column headers.

Though you run the risk of all sorts of other problems with the embedded Excel unless that's been fixed in the ST releases.

You can't re-crop an excel sheet to see a larger area once it's been placed on a draft sheet, so if you add a load of data it may not be visible.
This apparently is a Windows problem not SE.
You can get round it by having data in a cell way outside the required area. You will then be able to enlarge the cropped area at least as far as that cell.

Of course, Excel files work a lot better than embedded word files.
