Typical air stream temperature of a Kitchen Hood

Hi, I am working to size a kitchen hood exhaust fan and have a simple question of air stream temperature recommended.

I think you will have to be a little more specific about what is under the hood.
Is this a hood over a range where you will need a grease duct, or is it over an area where only cooking pots for boiling vegetables are used, which does not require a grease duct?

Normal Grease exhaust is about 110F - 140F. When selecting a fan, it is best to select a fan that has a max operating temp of at least 250F. This will allow the fan to operate in the event of a fire.

To work it out find out the gas supply to the cookers, convert it to energy, and calculate the temperature rise using the kitchen exhaust rate.

Quick calc on a typical exhaust hood indicates about a 10 oC temperature rise.

This would be a worst case steady state scenario, but might be exceeded if there is a flare up when cooking.
