thermoelectric cold plate, box materials

Hello,
I'm working on a project where I'm planning to use a Thermoelectric cold plate with a 6" x 4" surface to cool a metal box with a 8" x 18" surface.

I'd like to get the box surface as cold as possible, and be able to maintain its temperature when sprayed with warmer water. It needs to be constructed with Anodized aluminum or Stainless.

Would the aluminum be better because it transfers heat better or would the stainless be better since it doesn't?

Any suggestions would be greatly appreciated.

If your box doesn't conduct, how will your TE cooler cool it?

Since i primarily work on mechanical or cabinetry design, I'm sure my theory is probably a little off, but I guess that the Cooler would be placed against the stainless or aluminum box, like a piece of ice behind the metal plate. I would expect that some of the heat from the water would be transfered to the box and since the aluminum is more conductive then it maybe it would be the better choice.

Then I start thinking that if the Stainless is less conductive it might maintain the lower temperature for longer, but then would I assume that less heat is transfered from the water.
