you can idealizing the retaining wall as cantilever beam, it means you look it per meter or per foot
if the retaining wall is not symmetrical, you can assign it in ETABS too
you can also assign the soil pressure and water pressure as distributed load
if the retaining wall is not symmetrical, you can assign it in ETABS too

A wall in ETABS is simply a vertical shell, you can simply divide the wall in horizontal strips and assign an incremental surface load to each strip. This is an approximation and slightly conservative but OK for all practical purposes. New versions of ETABS offer distributed area loads so this is easier to model with a single wall element.
