After adding tolerances to dimensions, and zooming in or out, they seem to go wild, re-positioning themselves wherever they like. How do we make them stay put?

Are you sure they are actually attached to the dimension? Double check by dragging the dimension and seeing if the symbol moves with it.

I've had better luck with GDT symbols on dimensions by first making them as independent, stand-alone symbols, and then dragging them on top of the dimension to connect the two. It just works better for me that way.

Usually in "zoom all" mode they will look misplaced, but it's been my experience that if you are zoomed-in and have them placed correctly, when you zoom-out and print they haven't moved.
