Hi, I'm looking for a plot of concrete curing time vs thickness (any exposed dimensions of foundation) for a given f'c and/or water content. What I would like to know is time it takes to cure a massive thick concrete pad (4~8' thick x 30' x 30') for varying f'c. Does anyone have any papers or experience with this? Thanks in advance!

What you are looking for is maturity curves for concrete.
Such info is not available, to my knowledge, in a form you have described; however, you can determine similar by determining the maturity index for a variety of different concrete mixes.
