Which is the best solution for a big beer mixer (35.000L)? The seal goes at the bottom. Speed about 30 rpm. Working Pressure= 0,5 bar.
The beer or its raw material is a good lubricant for the seal? or Should I put a double cartridge with flush?

If you have a single seal and it fails you may lose all the beer in the vessel.. I think you are better using a double it will run for a long time and can justify the costs..

You need a sanitary design that can be easily dismantled for cleaning and sterilization.

They are using packing and the issue is that they have a configuration of the vessel they change it from inside the vessel. So, I would have to install the cartridge in the shaft but in the inside side and the cartridge will work in reserse, I mean the product would come from the locking ring side.
Doing like this we avoid to use a split cartridge. shaft 120mm

Do you think it will work well?

The idea would be to install a double cartridge no pressurized and to introduce beer in the chamber through the quench connections, as other product can not be introduced.

See the drawing attached.

What do you think? another alternative?

I think you will need to mount the seal externally or else it will be difficult to keep clean or sanitize ! If it's a double seal then you need to pressurize it with a barrier fluid, demineralization water perhaps? You may want to consider a rolled metal bellows as this is easier to clean vs a pusher seal that uses orings. Do you know if you have shaft deflection? If so the seal design may require a bearing.
I recommend that you call in a local seal representative to sit with you and go through the selection criteria.
