I am looking for help in how to best attach a wood framed roof structure to existing stone walls.

Can you pour a concrete tie beam on top of the stone and then cover it up with architectural treatment? You may have to anchor the concrete beam down into the stone to resist the wind uplift.

How would I anchor the concrete tie beam into the existing stone?

If the wall is sound, you can use Hilti HIT between cap stones. If 2 stone wythes, then use same into the mortar between.

If reconstructing mortar, then can use 'J' bolts into space between rock...

The bolts are used to secure a heavy timber top sill and the roof members are secured to this.

Make sure embedment sufficient for uplift.
