view information on hard drive?

Can someone help me out and maybe give me a step by step process to view some information on a hard drive that was deleted?

What information do you want... binary sector editor? gotta be careful... but, can search for lost data if it hasn't been over written. I use SectEdit.

- they do versions for FAT and NTFS
