valve usage/definitions 1

I would like to know what the difference is between a w.o.g and c.w.pand which one can be used on what.

w.o.g. = water-oil-gas
c.w. = chilled water

The usage should be intuitive based upon definition.

I think you meant C.W.P. for the second designation. This stands for cold working pressure, and is the pressure rating of the valve at a temperature of 100F. The W.O.G. designation just means that the valve is suitable for all three services.
