At my plant we have a well that we test for chlorides every three months and when the water first comes out it smells like tar. It goes away after pumping for a short time but what compound causes this smell?

Get a sample analysed for oganics. It could be anything but a test for PAH's, TPH and VOC would be a good starting point

It is probably sulfur. You should get a complete water analysis.

Through first step as multiple centrifuging to concetrate any contaminants.
Then extraction via separating funnel of non-aqueous layer if any and
thereafter detailed analysis should help.
