Can anyone recommend a commonly-availiable stainless steel with low galling from which I can manufacture washers. I need the finished washer to be hard >50 HRC.

You are going to need a martensitic stainless steel (410 , 420) not to bad about galling. If you need some more corrosion resistance you may need to use 440A or 440C. Also if you can use a lower hardness say 45 to 50 HRc there many other options. If anti-galling is all you desire a washer from Nitronic 60 or one of the other anti-galling alloys might work.

Come back with the corrosion resistance needed and the size.

I have had good luck with the following company. I would talk with them about your requirements.

Appreciate your update.
Good luck with your project.
