What is the difference between sheet and plate?

Example:
ASME SEC II B SB-171 Specification for Copper-Alloy Plate and Sheet for Pressure Vessels, Condensers, and Heat Exchangers

ASME definition:

Plate: 3/16" and over thk and over 10" wide.

Sheet: under 3/16" thk and 24" and over wide.

I also looked it up. SB-171 spec gives plate as 3/16" and over thk and over 12" wide not 10".

A sheet goes on your bed.

A plate goes on your table.
