I need good references on the subject matter. I do MSE walls designs and several times need to address the bearing capacity being estimated only for structural concrete walls, and have been asked to evaluate the possibility of over-excavating and reinforcing below the MSE wall, but have no idea on what is the best approach on this matter

I suggest you look into BS8006 and the sections on reinforced embankment foundations. This may provide you with some guidance on the subject.
