I am using a standard HVAC unit with air cooling a MCC room and the MCC control room controls a mfg operation with a lot of dust which is plugging the havac unit and it dies - what do I use in its place that can handle dirt.....?

I often had this problem.
Sure the outside exchanger foil is the dirted , specially as the air in a manufactruing room have oil minst.
I solve it attaching a simple air filter at the outside airs intakes.
If the intake air is small , expand it and put a proper filter.

Filters do not work with the amount of dirt that enters the system - LOTS - and if we have used them and they need changing too much and as such are a nightmare and get forgotten - any other helps out there?

Please reconsider using filter , widen it, do a big box and put a wider filter so you can span the filter cleaning or changing period.
Other good way is to route freshair from a clean air place, it can be done from te roof or a near window.
If route is a long way , put a blade fan on the intake.
Other way could be to change the heat exchanger by a water cooled one, maybe there is a water cooling tower system piping.
Other is to split the HVAC equipment , and put the condenser on the roof , a fan shall be added.
Other is to change the HVAC by a split system.
I had handled about 260 units on a manufacturing plant.
It had filters , a nowoven fibers 25 mm thick.
What is manufacture at such plant???
Hope this helps tip , help you.

It is a split system and a fan was added and it still has issues - since it is so messy with dust etc - it pluggs the system - and filters do not get changed

If it is a split , why it is on the dust inside the plant?

which is the dust's origen.??

the dust origin is outside the building where the fresh air is coming in all over the place....

Change to a water cooled condenser!

We did think of that - what if the water line blew - electric and water do not mix.....

There are methods to reduce the risk of leaks. However,I guess I do not understand, if the condenser is outside how would water be a problem for the MCC?
Maybe its possible remote the condenser/condensing unit away from the MCC or the source of the dust.

Good Luck

is there any other way

A water condensator has no wire or cable , but you need to get a HVAC contractor to fit the water condenser on the HVAC equipment.
As the condenser will be over the roof , if there is a leak , it will the same case when it is raining, and I guess you have not any problem when rains in your location.
