If the Pipe is carbon steel. Anything wrong if I use a SST thermowell? Or do I have to get a carbon steel thermowell to match it?

It all depends on what's going through the pipe. There are services where carbon steel is perfectly suitable that you really don't want to use an austenitic stainless steel...

Not enough information. There could be concerns with thermal differential and corrosion. Frankly, I would stay away from dissimilar materials when at all possible.

Sst is also less thermally conductive. The only time I'd use a SST thermo well in a carbon steel line is if NPT threads were permitted- then it's just a matter of convenience, as corrosion probably isn't a big risk ( or the threads themselves would be an issue)

SST thermowells are often used in carbon steel pipe and many times wrongly so. As the other responders have stated, it depends on the service conditions.
