Help Understanding Please 1

I will be operating 6 2000Ton York Chillers. Can someone explain to be in detail the relationship between oil temperature and refrigerant temperature. All I know is that the oil temp needs to be 50F above condensor sat temp. And I understand something about in not separating back out or something like that. Just haven't been able to get a clear answer on what happens. And also any help understanding the saturation temps. I understand this to be a pressure equalivent? But not understand what is happening when it is going up or down. Thanks for any help.

An Air Conditioning chiller the oil temperature should be 120 to 130*F and the refrigerant temperature should be around 49*F

CORRECTION: The refrigerant temperature should be around 40*F
