Heating and straightening steel

Question for you guys.
On A572 gr. 50 and A514 steel.
Is it allowed to heat the steel and put wet rags on it to stop it from moving anymore. Or is it best to let it air cool and hope it doesn't move go past where you want it.
 
I appreciate the info. I'm just tired of telling these guys that they need to let it air cool not to put rags of water to cool it down. Epically on a514 steel for drilling rigs. If anyone know any real explanation on why it can't be done please feel free to pass on any further information.
