Why is it that typically Shell and Tube heat exchangers have double metal jacketted gaskets while nozzles on vessels have spiral wound gaskets. How do you chose one over the other?
 
Other than design requirements or preferences a big reason is they are tougher in the normal small cross section seen in Hx's.

A spiral wound gasket would normally require a support ring or grove to retain it. The flange can be designed to restrain a non supported spiral wound gasket.

It is much easier to make a partitioned gasket by using a metal jacketed type. The easiest would be sheet gasket.
