Had to do some MIL galley design a few years ago... Galleys are NOT trivial systems, for various reasons.
Most of these documents relate to various aspects and inter-related elements... and contain numerous 'other references'...

I wanted to suggest GAMA 13, but Wil beat me to it (as usual).
WKT; I am with you on all items you list, except the last one. A lot of things have to go wrong before the galley becomes, err, a projectile.

MIL-STD-1587? There are metallic materials recommendations and restrictions for MIL galleys due to fire, corrosion, EE EL shorts-grounding, plumbing,etc...
Gag me... that was a way-out-of-the-box project for my group.

If you have a friend at Boeing and can get the required permission, here are some other documents that might help. I cannot supply them as I do not work for Boeing and do not have their permission.
