Is Piping Engineer more difficult than Rotating Equipment Engineer ?

It depends. The question is too broadly and vague formulated to give any answer

I would tend to see the rotating machinery engineer position as more complex and challenging. But, I am one, so I am certainly biased. As already noted, more details are needed to get a meaningful answer.

A better question might be which one is more personally rewarding

Go for the easier option - become a Project Manager - more rewarding financially but go and get your brains kicked out first!!!
