From my Casting model is there a easier method to create the core model driving it from my Casting as opposed to creating another model for the core?

If you want to get the hollow part in the casting to be solid, is it ur requirement then,....

just go in assemblies, assemble ur casting in newassly file. Then assemble a blank part file (which may include default planes only). Then copy the surfaces of the core part that u want into newly created .prt file (in assly file) & open it separately, make it solid thats it.
