Temperature will vary depending on many variables, such as....
1. How are the aggregates stored?
2. If open stockpiles, what color are the aggregates (dark or light)
3. What is your location? (Generally cool, warm or hot weather?)
4. What is the mix water temperature?
5. What is the mix design? (higher cement contents in the mix will increase the mix temperature because of increasing heat of hydration)
6. Have you considered ACI's Hot Weather concrete placement recommendations?
7. Is there an available source of cooling for the mixes, such as large quantities of ice to use in lieu of water in the mix or liquid nitrogen cooling in the mixing drum, etc?
8. What is the distance to the jobsite from the batch plant? The longer the distance, the more the temperature will rise.
9. Have you considered using Maturity Methods for checking the curing process of the concrete?
As you can see, there are many, many considerations that have to be made to respond to your overly broad questions.
