I have a model I had to make revisions to. If I save the part under a new name I have to reconstruct all related assembles. If I save it the way it is I loose the original model which I may need again. Is there a way I can save this part so I can toggle between the two revisions and have my assemblies update automatically?

Save the old revision in a backup location as a copy.

Learn to use "Replace references" and "Rename" in SW Explorer. Learn to use "Replace components" to swap components in assemblies. These tools will allow you to swap copies of parts within assemblies with little difficulty.
