Can you help me about the best solution for a liquid brine application?

Temp: -5ºC
P: 4 bar
RPM: 3000

Single or double cartridge? API PLAN? Faces?
Do we have to consider crystallization?

You can do this with a single seal. Sil vs Sil, Nitrile or EPDM orings, duplex S/S wetted parts external spring design, balanced cartridge. Plan 11 + 62 intermittent quench. If crystals start to form wash them away with the water quench. If you use a lip seal to use permanent quench, lip seals with mech seals at 3000rpm are not reliable.
Alternative is a tandem with water buffer fluid. This prevents any potential of crystal build up and saves you running water lines to seal. plan 11+ 52

Note if spring is in contact with product use Hastelloy or Monel not S/S because it will fail due to stress corrosion.

Trust this helps

Is it posible to use API PLAN 62 without using the 11 (from the discharge). Which is the difference between using, also, API PLAN 11 or not in this case?
Generate movement inside the chamber to avoid cristal build?

It is recommended to have plan 11 to remove heat generation. You can have plan 02 but as you don't indicate seal size I advise against that. Cost of plan 11 is negligible.

Shaft size 30 and 40mm.
Plan 02 better than 11?

You will get away with plan 02 due to shaft size but plan 11 is always recommended. make sure you wash away the crystallization and you should be fine. This is straight forward application.

Cheers
