Is it possible to get 600 volt single phase form 600 three phase?
 

Yes. Generally, {codes and standards considered} one may connect a 1ø 2-wire load to two of three phases. Can you elaborate on the application?
 
We have a supplied humidifier which is 600 volt single phase but only have 600 3 phase on site. just trying to figure out if we can make this work.
 

It is routine to serve a 1ø 600V load through a 2-pole overcurrent device {fuses or circuit breaker} from two phases of the 3ø 600V source — Aø/Bø, Bø/Cø or Cø/Aø.
 
What power is this item rated at?

Also you need to watch that you have no earthing on one of the phases, like a neutral type conductor and phase, humidifiers generally well some utilise electrodes in water to generate the humidity and you will need to ensure that there is no shock hazard from going phase phase instead of phase neutral.

If needed you could put a transformer in to isolate as a 1:1 ratio and ground one of the output terminals to give you a neutral and hot feed.
