Is there software that can read a scanned piece of hard copy and convert it into a Word document that can be edited like a normally created Word document?

Any of the full-version PDF editing programs like Acrobat or Nitro or PDF Architect can all do OCR and export to Word, but this is nothing new

TTFN (ta ta for now)

yes..there ist lots of software that can do this....

You need to choose wisely. Many of them translate individual paragraphs into text boxes in fixed positions. You will only know this when you start editing. If the subsequent paragraphs do not move up/down, then it is a text box translation. Those are no good for editing.
