Hello,
I'm looking to sandwich 2 flat solid decorative wood parts onto a type 304 stainless steel plate, very much like the wooden handles of kitchen knives, except the bonding surfaces are 3 cm x 54 cm. Knive handles are riveted together but, for esthetic reasons, I would rather use an adhesive of some sort to bond the parts together. However, I must have as minimal adhesive thickness as possible.
Also, the ss plate may at times be copper or brass plated, so the adhesive would have to work for those surfaces as well. Any suggestions? Thank you.

Try Alpha Knife supply - Many knives are bonded rather than riveted.

Were I doing this my big concern would be the quality of the plating.

To bond stainless, copper, brass etc. to wood for knife handles I would use a 2-part epoxy. The reason for this is that knives will go into the sink or dishwasher so they must have good water & heat resistance. They will be used to cut, so it must have excellent strength. It must also have shock resistance (in case it is dropped). Use a "high-performance" epoxy with all of the qualities listed.

Best of luck, John Schrock
