Is there such a thing as Aircraft Quality type 321 stainless steel sheet & coil, and if so, what are the specific requirements?

Only in terms of buying material to the AMS specifications.  Physically the material is no different than if you order to ASTM or AMS, but it has paperwork.

You do know that paperwork is what keeps planes up in the air.  Just do some work for an aircraft company and you will learn that.
