xfmr input: 240v, 3 phase, 3 wire delta, grounded B phase.

xfmr output: 380v, 3 phase, 3 wire delta.

output supplied to dedicated, isolated, european machine.

Question: Is it necessary to ground an output phase of this xfmr as would be typical of a domestic 3 wire system. What are the pros/cons of grounding a phase.

Most European utility supplies are 400/230V star with a solidly grounded neutral. 380V is an older standard and the modern equivalent is 400V. I can't think of anywhere that runs a 400V delta system as a utility supply in Europe. You really should get the correct transformer to provide a supply with similar characteristics to the one it was designed for, i.e. a 400V star connected transformer with a solidly earthed neutral, regardless of whether you use the neutral connection on the machine.

I don't have an attitude problem. You have a perception problem...
