I have a 2", 200 WOG bronze gate valve to use it with steam. 200 means that it works with 200 psi, right? but under what temperatures?

The valve manufacturer will be able to tell you, or it should be in the literature. Remember that this valve (and everything else) in the steam system will need to be rated for the safety valve set pressure, not the operating pressure.

leojose,

Reference to the abreviation "WOG" is made in MSS SP-25 (in my 1998 Ed. it's a note to Par. 4.1.3).

"WOG" (water, oil, gas pressure) is said to correspond to "CWP" (Cold Working Pressure). CWP is the maximum pressure rating allowed under normal "anbient" temperature conditions, which are usually understood to be -29°C to 38°C.

As per MSS SP-25 "WOG" does not correspond, however, to "WSP" (Steam Working Pressure).
MSS recommend to consult the applicable codes, standards and manufacturer's data sheets.
