Does the weight of the water that the Tremie Slab is displacing keep the slab Level while pouring..????

Not appreciably... you are looking at the local differential in concrete height... as an example, you may have 40' of water on the concrete surface at one location and 41' of water adjacent to it... only a 1' differential.
