Wow, air traffic controller. And I thought your background already was about as diverse as it could possibly be.
But....
There's good news in several of those work history's.
Air Traffic Controllers - people who have to perform mistake free work consistently. (Or people could die.)
Cooks (Chef-ing) - there is another type of work where results have to be top notch, timely and are guaranteed noticed when they are not (and people could die.)
Pre-med - depending on your grades, not a walk in the park - shows you are capable of learning.
So, you are looking for the type of job that demands a high degree of perfection and the ability to deliver.
You may want to look for some kind of field technician (Field Service Engineer) type of job. Looks like you don't mind getting around and this can be a good entry into the PE world at your age.

On the other hand, I suspect that I see the makings of a college Prof, so you might think about getting your Masters then PHD and teach.
