Hello,
With regards to thermowell wake Frequency Calculations how big a role does the process fluid density and viscosity in the calculation?

You'll have to explain, just what process conditions are you dealing with.

Some select thermowells on the basis of connection size only, but that tends to be risky, don't you think?
 
IMO, some fluid properties may not be used in the equation directly, but to impact the fluid characteristics such as Re, velocity, etc.
