Standards for foot-operated controls

I am doing a research study on the stress experienced by the foot in cycling shoes. I am curious if there are any ANSI standards or similar standards used in the design of foot-operated controls that state how much stress the foot can withstand and how much stress is "too much". I am also interested in repetitive injury data on the subject. Any ideas?

There is ongoing research into sports and sports injuries that is being conducted by Dr Tim Noakes at the Sports Science Research Institute (I think this is the name) at the University of Cape Town.
