Is it O.K. to use #10 stn stl screws with stn stl nuts(not locknuts)? Would there be a problem with galling? Or would that just occur if the nut was a locknut?

Also, what is the rule regarding the mating of screws and nuts with different thread classes (class 2 vs. class 3)? I seem to remember that it works one way, but not the other.

There is always a problem with stainless vs stainless with fasteners. Even though this is a problem this ombination is used everyday. If your process will allow it a little thread lub helps. Things like Fel Pro C5A does a very good job, but you should try different anti-seize materials to best fit you situation.

What about the question about mating fasteners of different thread class. Any thoughts regarding that?

If you buy a fairly decent quality fastener there should be no problem with you proposal.

Don't let the galling problem dissuade you since the a light application of an anti-seize is extremely effective with fasteners in your size.

All classes work with all classes. Class 3 to class 3 basically gives you a line fit. Any other combination means you have a clearance.

The one time you may get an issue is if the fasteners are plated. Undersome circumstances the thread class wont apply after treatment.

As to Galling, the instances I've been involved with it has been on larger threads but I'm not sure it's limited to only those cases.

Depends a lot on the flavor of stainless.
Buy some and try them.
Degreasing can aggrevate the problem.
The right antiseize can help a lot, but it can be a pain to apply correctly and discreetly.

For aerospace/miltary use a silver coating on the thread is used to prevent galling on high strength bolts.
