Hi, I have a question about how much space should I leave between the beam and the last joist to fill it with concrete?

We have no idea what type of framing/structural system you are referring to, so there's no way to give an intelligent answer based on the meager information provided.

Can you provide a sketch. These are often useful when looking at problems.

From the information given;
Leave enough space for the concrete.
