I want to make a sketch on the inside of a part. I already have the plane I need.
Is there a way to hide everything on one side of the plane while sketching?

Take a look at the 'Visualization' toolbar. A command called 'Cut Part by Sketch Plane' might get you what you are looking to accomplish.
