Hello,

At which ? angle we don't need "upper" formwork to avoid "amassing" of fresh concrete?

It would depend on the workability of the concrete mix
 
Angle "alpha" depends on the slump of the concrete mix (and to some degree, the friction between the formwork and the plastic concrete). The lower the slump, the higher alpha can be. A practical limit to alpha is about 45 degrees with a slump of zero.

Speed of placement also has an effect. The slower you place the concrete, the less likely "amassing" will be.
