To start with, recognize that you'll be pumping four different fluids from 4 different sources, via four different pumps (pumping methods, suctions, cut-out valves) and four different dispensers = four different pipe networks. Windshield wash fluid? Transmission fluids? Plain water? Shop air?
How many work bays? How (where) are you going to use each fluid? How are you going to refill each fluid?
None of these are highly corrosive, none uniquely extremely dangerous. Modestly low pressure (grease probably highest pressure) but your grease dispenser is easier with a air=powered grease gun, not a dedicated pipe. Low cost simple steel pipe is adequate, as noted above.
