I am trying to understand how many 1.25" pipe turns I can install in the 20" dia vessel. How small a coil can 1.25 sch 80 pipe be turned. I want to add a heating coil to the bottom of 20 " vessel and I wasn't sure how small I could get for the needed surface area.
 
Well, sch80 PVC pipe can be bent to a pretty small radius. Did you have some other material in mind?

yes, 1-1/4" sch 80 carbon steel pipe in a 20" dia vessel.
 
I'd guess that a good metal- bender could get two full turns in a flat spiral coil, more if the pipe is first flattened. The limiting factor is probably the radius of the transitions you need from the coil to the axial inlets and outlets.

You could probably get more area in the same gross volume by using the pipe as axial headers, with right angle connections to multiple spirals bent from small diameter tube, or with multiple embossed plate coils.

Is is a horizontal or vertical?
Horizontal, I would also consider putting a couple straight legths tied together with some 180 deg Ubends on the ends. It would be a whole lot cheaper IMO as long as you get the area required. You won't get as much turbulance but you could easily put it through a man-way and weld in place.
