I do have viscosity and density of this wet cells....somebody can give me an idea about how to estimate this viscosity or density?

If you are working on a project, then the best and most practical thing to do is, as we say in Spanish, "usar el ingenio" - use our ingenuity. What I would do is buy a crate of the subject oranges, peel and squeeze them for the pulp and juice and test the results in vivo. There is no better answer to base the design of expensive equipment on.

You may get a surprise and get a non-Newtonian fluid viscosity! Who knows? That's what I would do and what I would recommend.

Good Luck.
