I was wondering which online finite element analysis courses you have taken, specifically which ones were good value for your money and why you thought so?

There are several courses available, but how useful they are (or not) depends on the practical experience you can obtain from them. Unless the author(s) of the course (or the authors of the book devoted to FEA) provide ready-to-use codes, which you can not just run but also to examine, study and modify, such course or book are rather introductory, with questionable usefulness.

That is interesting, so you are saying that there needs to be access to the FEA software as well to apply what is learnt in the course. I think I see what you are saying.

Yes, and the benefits are even more pronounced if the students can actually work with the codes themselves (which are usually written in C/C++ or Fortran), not only with the executables. Here is an example of one such book with both theory and codes (which the authors may eventually decide to turn into an online course):
