typical hydrant pressures are based on flows at 20 psi.
Per 1142, 7.2.1 The minimum water supply required for any structure without exposure hazards shall not be less than 2000 gal
However, that is a starting point. You would have to look at the local building / fire codes to determine your fire flow demand based on construction type, sprinkler protection, area of facility, etc... I believe it is in appendix B or C of the IFC that tells what fire flows are to be. If you are under another Code, just reference the fire code and it should be there.
