How is Motor parameters such as efficiency dependent on type of load i,e whether is is for pump application or Fan application.

The load can't change the motor characteristics. The load on a motor will change the motor operating point. The motor datasheets will have curves showing the efficiency, power factor and current at the operating load.

For efficiency, obviously constant losses like iron loss, windage, bearing loss etc are not load dependent. The variable loss is copper loss, which though load dependent, is not type of load (fans, pumps, compressor etc.) dependent. The type of loads (e.g high inertia loads which will typically require high starting torque) will determine the starting time of the motor though.
