MEP financials

Hi,
I've worked at and MEP firm for years and am in the process of starting one myself. My company has an accounting division so I never worked with the money so I have a question as to how it works; Are payments made/received by architects actual paper checks that are mailed, or do most firms do it online? I'd like to know what most firms do.

The firm I work for has the clients mail hard copy checks. We send invoices monthly on the first.
