matlab: create a polynom out of a matrix/3d-plot

Hi, I have question about creating polynom equation out of a 5x7 matrix respectively ist 3d-plot. So far I have only found possibility to create out of a 2d-graph.

There is a set of a data given. The z values are prices dependent on market penetration und technology level. Via the order "surf(x,y,z)" i can generate a 3d-plot. Out of the set of data / plot I would like to figure out the polynomial equation, so that I can interpolate those. Is there a way to do it with matlab?
