I'd spec 4" or 5", that way the Ironworkers slinging down the decking will be [reasonably] sure to achieve the >2½" 100% of the time. If there will be an inspector involved, let them know that fractionally less than 2½" is where the sheet(s) will have to be REJECTED and relaid.
