We are working on setting up a bend table for Inventor that will match what the shop practice is. Does anyone know what Inventor uses for bend dimensions. i.e. inside dims, outside dims, middle of part etc.

I'm not a heavy sheetmetal designer, but most of the properties are set under the sheet metal styles dialog box (material properties, bend radius, K factor, relief shape, width, all that good stuff), and you can over-ride them when you make a face. When you make a bend it will give you options for the location of the bend (sketch line in center or on either end of the bend) and you can re-set the radius of that bend when placed. Of course you can go in and edit afterwards if you like too.

It has problems if you are trying to make a bend that is going to intersect with another part, which has been frustrating for me, but I'm coping.
