I have tried doing research to find Abaqus's interpolation algorithm and have had very little luck. Does anyone know where, or if, there is any information on how Abaqus interpolates values between Gaussian points within elements? I also imagine this information may be something they wouldn't share--any educated guesses?

ABAQUS uses the shape-functions to calculate the values inside an element. The shape-function depends upon the element-type.

I understand it uses a shape-function but I would like to know more about the weighting within the algorithm when you have values between element points for example.

No, this is not a student question though I am still doing my MS at TU-Darmstadt. I am comparing analytic results of radial stress in thin sheet, notched plates to the Abaqus results. There is very small error (about .1-5% depending on seeding) between the two but if I knew the algorithm, I could make a better conclusion on the effectiveness of Abaqus in my results.
